Processing confusion

I've been reading and watching a lot trying to prepare to learn to process/butcher my own deer. When is it ok to cut through bone? I've been told not to (especially in the field) because of cwd, and also the "fragments" can get in the meat and degrade quality? I've also seen guys go to town with hack saws, or smaller saws through pelvis bone, legs, etc. is this a maybe/sometimes/it depends situation?
 
as a cattle guy, i know you never ever cut through the spinal column. that is very bad, there is something called preons . its what mad cow/esephalitus scrapies in sheep and cwd in deer. it spooks me enough, when i get beef processed, i make sure none of my beef gets the spinal column cut. personally all my quarters are boneless also. those diseases spook me , i know what they are, so i am more careful.
 
Yea that was my understanding.... But I've seen quite a few guys just go to town with a hack saw through legs, ribs, and the neck. I know for sure it's not good to do in the field.... Are these guys just rolling the dice or what. Its still confusing me as to if there are circumstances that would make someone confident in there being no danger. I'm not willing to risk it either
 
the rule is specific spinal column, never ever cut it. its a terrible disease when it gets into people. 1 person a year in the u.s. gets it . you should talk to a usda meat inspector.
 
Just hearing about this, it's wild how serious prions are. makes total sense to be extra cautious with spinal columns and boneless quarters..those diseases aren't something you want to mess around with
